Did you leave out onions and garlic on purpose? I'm curious because I feel that onions and garlic sometimes overpower the true flavor of the dish.

Sujan Kapadia that is what the asafoetida replaced. Some Indians do not use onions and garlic but use asafoetida and its place which is reminiscent of the flavor but believe that you should not have onions or garlic on your breath because you could offend somebody.

There are couple of things you can do to get properly cooked Rajma. Firstly, boil the rajma without adding salt. Secondly, once you simmer the heat after one whistle, let it cook for 45-50min. If still the Rajma appears to be uncooked add a bit of hot water and cook for another 10min. Do let us know how your dish turns out. Have a good one :)
